Blackberry Cobbler

I call it the lazy man’s pie. Cobbler is such an easy dish to make with pretty much the same taste but without all the hassle of making a traditional pie! I saw these beautiful blackberries for sale at the local grocery store and went overboard and bought..a lot! Suffice to say, we did not consume them at the rate I thought we would and I had to look up ways to use up the fruit quickly. Zeroed in on this cobbler recipe from Southern Living…quick and simple!

4 cups fresh blackberries (I used three 6 oz containers)

Juice from half a lemon

1 large egg

1 cup sugar

1 cup All-purpose flour

1 stick butter, melted

whipped cream or ice-cream for topping

Mint leaves for garnishing

Preheat oven to 375 degrees. Lightly grease a 9 1/2 inch/24 cm pie dish. Spread berries on the bottom and drizzle with the lemon juice. In a separate bowl, combine flour, eggs and sugar till mixture resembles breadcrumbs. Spread this mixture over the fruit. Finally, drizzle the melted butter over this mixture and bake for 35 minutes or till lightly browned. Let it sit for 10 minutes. Serve warm with whipped cream or ice-cream. Garnish with fresh mint leaf. Enjoy!!!!

Note: You can use pretty much any berry that you like.
