Tiranga Caprese Skewers with Balsamic Honey Reduction

So, looks like everybody is making the obligatory tri-colored item for the occasion…but I didn’t want to go the traditional route and decided to do something different (well..at least for this occasion), simple and elegant…with a sweet blueberry twist!

Skewers
Mozzarella balls
Orange Cherry Tomatoes
Blueberries
Basil (A very special thanks to Kim Huang for fresh basil from her kitchen garden! ?)
Salt & Pepper
Toothpicks

Dipping Sauce
Balsamic Vinegar: 1/2 cup
Olive Oil: 1/4 cup
Honey: 1/8 cup

Mix Balsamic Vinegar, Honey and Olive Oil and heat in a saucepan. Bring to a boil and cook till it reduces enough to coat a metal spoon. Take care not to burn it. If it gets too thick, add some water and gently warm it up again to desired consistency.

Skewer the cherry tomatoes, mozzarella, blueberries and basil leaves on individual toothpicks. Sprinkle salt and pepper.
Drizzle Balsamic Honey Reduction over skewers or serve as dipping sauce on the side.
