Mom’s Mutton Fry

This is a childhood favorite that my mom used to make…it still very much is BTW!
Very simple, Very easy and Very tasty! Can make chicken the same way except cooking time will be reduced.
NOTE: When I mention 2 onions, I mean two huge onions..probably 4 of the Indian size because lots of onion is the key to this dish! and Do Not stint on the ginger-garlic paste either…YUMMERZ!!!

Ingredients
Mutton 1 kg (about 2 lbs)
Onions 2 sliced
Green Chillies 4-5 slit
Ginger-Garlic paste 3 tbsp
Chilli Pd. 1 tsp
Garam Masala 2 tsp
Salt, Haldi (turmeric), Hara dhania (Cilantro)

Method
Add haldi, salt, chilli powder, green chillies, ginger garlic paste to the mutton and pressure cook without any water for 3 whistles and then 5-6 minutes on sim. Depending on how tender the mutton is, you might need to keep it on high for another whistle. Once it cools down, remove lid and dry up any remaining liquid.
In a separate pan, heat oil and sauté onions. Add a pinch of salt and haldi (turmeric) to the onions and carmelize till dark brown. Add the cooked mutton and garam masala powder and fry till done. Garnish with dhania (cilantro) and enjoy every mouthfull!!!
