Quinoa Chickpea Salad

Super yummy salad and super easy to make!

Ingredients
1 cup red quinoa (can also use white)
Water, 2 cups
1 (15-oz.) can Chickpeas, 1 15 oz can, drained (approx. 1 1/2 cups boiled chickpeas)
Red Onion, 1 medium chopped/ 1/2 cup
Fresh Mint Leaves, 3 tbsp finely chopped
Extra-virgin Olive Oil or regular olive oil, 1/4 cup
Fresh Lemon Juice, 3 tbsp
Salt, 1/2 tsp
Fresh Ground Black Pepper, 1/2 tsp
Method
In a medium saucepan over medium-high heat, bring red quinoa and water to a boil. Cover, reduce heat to low, and cook for 15-20 minutes or until water is absorbed and quinoa is tender. Let cool. (Can also cook like rice in your electric cooker)
In a large bowl, add cooled quinoa, chickpeas (chole), red onion, and mint.
In a small bowl, whisk together extra-virgin olive oil, lemon juice, salt, and black pepper.
Pour dressing over quinoa mixture, and stir well to combine.
Serve immediately, or refrigerate and enjoy for up to 2 or 3 days.
