RIDGE GOURD (TURAI) & EGG IGURU


The humble Beerakaya Kodiguddu Iguru (Telugu). Simple comfort food with no masalas. Goes great with rice or chapati.
Variations: can also add chopped potatoes and/or drumsticks and/or tomatoes as well. Can make this without the eggs too.

Turai (Ridge Gourd)- 2 long
Onion- 1
Green chillies- 2-3
Milk- 1/2 cup
Boiled eggs- 4-5
Tadka: mustard seeds, jeera, red chillies, 1 crushed garlic pod, kadi patta.

Check turai for bitterness. Peel and chop into small pieces. (Save the peel for a later recipe!) Chop onion into small pieces. Slit green chillies. Heat oil, add mustard seeds. Let it splutter, add jeera, crushed garlic, red chillies and kadi patta. Add onions and haldi and sauté till transparent. Add ridge gourd and sauté for a minute or so. Cover and cook on medium heat. Season with salt and chilli pd (optional). Water will ooze out of the vegetable and cook till its almost dried up. Add the boiled and slit eggs at this stage. Lightly toss. If the ridge gourd is not completely soft by now, add a little bit of water and cover and cook till soft. When there is a little bit of liquid left, turn up the heat on high. When the curry heats up well, add milk and mix well and thoroughly and continue cooking till milk thickens. Take off heat. Take care to be careful with the eggs.
